Bogotá Food Tour

<p style="margin-left:0px;">Bogotá sits high in the Andes, on a savanna the Muisca farmed for centuries before the Spanish arrived. Our Bogotá food tour walks you through La Candelaria, the oldest part of the city, and tells its whole history through what you eat.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">You'll start in a working market with a syrup-cooked fig and a tasting of fruit most people outside South America have never seen. From there, a local guide who lives in Bogotá leads you through the streets and plazas of the old center, one bite at a time: the corn the Muisca grew, turned into a leaf-steamed tamal, a fermented drink this city once tried to ban, and a griddled arepa. You'll try coca tea and finally hear the truth about the leaf, then warm up over ajiaco, the potato soup Bogotanos adore like family.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">Along the way your guide fills in the parts a map leaves out: the plaza where the city was founded, the Indigenous people who were here first, and the murals painted across whole buildings and the fight it took to make them legal. Victoria Food Tour

<p style="margin-left:0px;">Old Town Victoria is a few blocks of brick warehouses built on gold rush money, and it holds together better on foot than through a bus window. The wharves and the buildings behind them made this the main port of western Canada until 1900. Walk north from the Inner Harbour and the streets narrow, the brick gets older, and the shop signs switch to Chinese.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">We start at the water. Your first stop is a takeaway window on the causeway below the boardwalk, where you eat looking across at the Legislature and the harbour planes coming in. From there we work inland through Old Town: a tasting bar with dozens of oils and vinegars on tap, a chocolatier trading since the 1880s, and a bakery on Fort Street. Then north through a heritage market square and under the Chinatown gate for barbecue pork.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">Your guide lives in Victoria. Calgary Food Tour

<p style="margin-left:0px;">Downtown Calgary rewards walking in a way few North American cities do. Six blocks take you from a Chinatown founded by 1880s railway families to a riverside district rebuilt in the last fifteen years, past sandstone banks raised after the fire of 1886. We walk it slowly, with six hand-picked stops along the way.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">You start in Chinatown. A Vietnamese counter turns out satay chicken bánh mì on bread baked for the job, with pickled carrot, cucumber, and coriander piled in. A Chinatown dining room a few doors along serves the deep-fried chilli-and-ginger beef this city gave the rest of Canada, invented by a Calgary chef in 1975.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">From there we cross into the old commercial core for Alberta brisket cooked low and slow, then head east for steamed Afghan dumplings under sauces made in house. A Colombian bakery hands over a warm buñuelo, fried cheese bread eaten across Colombia at Christmas and all year round. We finish over drinking chocolate at a shop where the bonbons are painted by hand.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">Your guide lives in Calgary. Raleigh Food Tour

<p style="margin-left:0px;">Downtown Raleigh is smaller than you would think, and better fed. Our Raleigh culinary tour walks you from Moore Square, one of two four-acre public squares surviving from the city's 1792 plan, west across the old commercial grid and into the Warehouse District, where red brick buildings once held freight, tobacco, and railway offices. The whole route sits under oaks and takes about three hours on foot.</p><p><br>Five stops, and no two belong to the same tradition. You start with a steamed Cantonese barbecue pork bun in a room part brewery, part bookshop, part flower stall. You work through a Lebanese spread built on family recipes carried over a century ago, hummus and baba ghanouj and shawarma and fried kibbee. You eat whole-hog barbecue chopped fine and sharpened with vinegar, the way eastern North Carolina has done it for three centuries. You finish over three bars of chocolate made from the bean in a converted railway depot. Somewhere in the middle, we hand you our secret dish, which stays secret until the day.</p><p><br>Your guide lives here. They will tell you why the barbecue argument between eastern and western North Carolina still gets heated, what East Hargett Street meant to Black Raleigh in the 1920s, and which of these kitchens they take their own family to. Halifax Food Tour

<p style="margin-left:0px;">Downtown Halifax sits on a slope between an old civic square and a working harbour, and the whole of it walks in an afternoon. We start at Grand Parade, laid out in 1749 between City Hall and St Paul's, and head downhill through the streets Haligonians eat in.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">You will taste the city's official food. Halifax invented the donair, and in 2015 the city made it the only municipal food in Canada. We take it as a donair poutine, so the spiced beef and the sweet garlic sauce land over fries in one forkful, at a downtown institution known as much for its warren of rooms as for its cooking.</p><p>&nbsp;</p><p>Down at the water you sit in a pub open since 1974 inside a stone warehouse built for privateers. A cup of seafood chowder, then a plate of deep-fried pepperoni with honey mustard, which is the snack Haligonians order without thinking and most visitors walk straight past.</p><p>&nbsp;</p><p>Your guide lives here. You get the argument over who makes the best donair, the reason one North End butcher supplies most of the deep-fried pepperoni in town, and an honest answer on where to eat after we finish. We keep groups small, so questions are welcome and the pace stays easy. We also take you somewhere we do not name in advance, a stop surprising guests every time.</p><p>&nbsp;</p><p>By the end you will have eaten across three centuries of Halifax, and you will leave with a list of places worth coming back to.</p>

<p style="margin-left:0px;">Kingston was built as a garrison town and the downtown still looks the part. Grey limestone walls, 1840s shopfronts, a working harbour at the bottom of the hill. Step through the doors and the story shifts.</p><p><br>Six stops, six kitchens, four continents, and about 1.3 kilometres of walking. You'll eat a Montreal-style bagel, hand-rolled and honey-boiled before it meets the oven, from a bakery open a few hours a day. Steamed Himalayan dumplings, half vegetable and half chicken, from a family kitchen on Princess Street. A fried lentil doughnut sunk in South Indian sambar. Extra virgin olive oil and small-batch balsamic, poured side by side so you taste the difference between them. Ice cream from a counter making it in-house since 1986. And one stop we keep to ourselves until you're standing outside it.</p><p><br>Your guide lives in Kingston. They know which owner will talk your ear off about a grandmother's recipe, which door looks shut when the kitchen is wide open, and why a city of 130,000 supports this much cooking from this many places. Along the way you'll hear how Queen's University reshaped the streets around it, why Kingston holds more Feast On certified restaurants than any other city in Ontario, and what a 19th-century market square still does for the people who cook here.</p><p>&nbsp;</p><div class=""><div class="relative card-elevated p-5"><div class="markdown-body text-sm"><p style="margin-left:0px;">On your own, you'd walk past three of these six doors. Asheville Food Tour

<p style="margin-left:0px;">Downtown Asheville rewards walking. The streets bend past art deco, neo-Gothic, and Spanish Baroque within a few hundred metres of each other, and the food worth eating sits tucked in between: a counter here, a tasting bar upstairs there, a shopfront with barely a sign on it. Our route covers a compact loop of the city centre, and you will eat six times along the way.</p><p style="margin-left:0px;">You will start with Indian street food, chargrilled and rolled into warm flatbread with slaw and green chutney. From there, a buttermilk biscuit built around dry-cured Appalachian ham, then a pressed panini on toasted ciabatta from a shop better known for its hand-cut potato chips. Dessert is a quarter-pound cookie with an ice cream centre, halved so you have a hand free. Somewhere in the middle we take you into two local artisanal shops for tastings we do not reveal in advance.</p><p style="margin-left:0px;">&nbsp;</p><p style="margin-left:0px;">Our guides live in Asheville. They will tell you why the arcade you meet outside was meant to carry a fourteen-storey tower, how the city's refusal to walk away from a Great Depression debt accidentally saved the buildings you are standing in, and where they eat on a night off. Ask them the awkward questions.
